What are texturizers?

Texturizers are food additives added to food products to increase the stability of the product, while improving the texture of the product. Food texturizers can come from many sources, some of the more common being plants, animals, and sea weed. Since water is such an important ingredient in a formula, the way you structure it will be critical to your product design, both in terms of function and sensorial properties.

What does a texturizer do?

What texturizers do in foods is help maintain a uniform texture or consistency. These are substances commonly known as binders. Examples are gelatine and carrageenan. When it comes to reducing sugar or fat content, these ingredients are useful for adding texture and richness to low-fat foods and products. In many cases, product developers will use soy protein as a texturizer, but other vegetable proteins are also used.
