Blonk teff is grown in Spain and is 100% traceable from farm to table. The teff grain is milled into very fine flour that is used for the traditional Ethiopian en Eritrean dish Injera. For Injera the teff needs special characteristics to obtain a perfect natural fermentation. The controls to obtain these characteristics start in the field and end after the very fine milling. This flour was developed after getting many years feed back from Ethiopian and Eritrean communities all over the world.
