NuTek’s clean label salt solutions deliver great tasting, lower sodium mineral and sea salt for a healthier nutrition balance with the same functionality as regular salt.

SFL 100 RF G3 is the variant utilizing rice flour as a carrier, designed for a 1:1 substitution of standard salt in recipes.

Salt Levels Adjustment: To achieve a desired salt level, for example, 0.9%, directly substitute standard salt with SFL 100 RF G3 to reach the target. If usual preference is for a 1.25% salt concentration, you can reduce standard salt to 0.9% and complement it with 0.35% of SFL 100 RF G3 to maintain the flavour profile.

Explained in a different way it works very simple: when the original salt content in the recipe is 10 kg and the target is to reduce 40% then the new recipe will be 6 kg salt and 4 kg of SFL 100 RF G3.

Testing Instructions: NuTek’s salt replacers are based on potassium chloride. It is a patented process and basically straight KCL is dissolved in water together with a carrier and a modifier (citric acid). The material is then dried. During the drying process new crystals are formed. The result of the new crystal configuration is that the bitter and metallic taste commonly associated with KCL, has mostly disappeared.

These crystals work very well in liquids but they need either enough ionic strength in the solution to stay intact or enough viscosity. If none of these elements are present then the crystal dissolves completely and it is like you simply dissolved straight KCL in water. Hence the bitter and metallic taste will re-appear again. Therefor the application in broths is one of the few applications where NuTek does not work.

It is best to test in the actual application and add NuTek as late as possible in the process.

1. Do not dissolve in plain water: Contrary to common testing methods, dissolving these salt replacers in plain water is not recommended. Such a practice does not reflect their intended use and may result in the re-emergence of the unwanted bitter and metallic taste.

2. Optimal Testing Conditions:
Application-Specific Testing: For accurate taste assessment, incorporate NuTek salt replacers directly into the final product under real-use conditions.
Integrate NuTek as late as possible in the production process. Avoid pre-dissolving in water, particularly for applications like cheese production where the dry salting method is preferred.
