Description
Ascophyllum Nodosum, commonly known as knotted wrack or egg wrack, is a brown seaweed. Ascophyllum nodosum contains a high level of dietary fibers (around 40%) this alga is also composed of several minerals and trace elements of interest for human health (iodine) in addition, it is rich in polyphenols and vitamins. The Ascophyllum nodosum can be used as a flavour booster, thanks to the umami synergy, allowing salt reductions.
