Description
Ammonium Chloride (Salmiak) is a pure synthetic salt with a characteristic salty taste. It’s a crystalline powder with a good solubility in water. This additive provides the typically salty taste in applications with liquorice. In bakery applications it could have a positive effect on the bread texture (yeast nutrient). In other applications it could help to reduce Sodium by a partial replacement of the Sodium Chloride by Ammonium Chloride.
Dosage levels:
Confectionary core 1-3% (mild) 3-8% (salty)
Confectionary coating 20-50% (salty)
Bakery 0,1-0,5%
