GPI GF Cake Mix is a blend of sugar, brown rice flour, millet flour, potato starch, skim milk powder, baking powder, flaxseed meal, salt, sodium bicarbonate, and xanthan gum. It produces gluten free cakes with soft crumb texture, which is easy to prepare with addition of simple ingredients.

Ingredients: Sugar, Brown Rice Flour, Millet Flour, Potato Starch, Skim Milk Powder, Baking Powder (disodium diphosphate E450i, sodium bicarbonate E500ii, corn starch, monocalcium phosphate E341i), Flaxseed Meal, Salt, Sodium Bicarbonate E500ii, Xanthan Gum E415.

Suggested Application Recipe: Gluten-Free Mini Cupcakes (Makes 36 with 2” diameter)

  • Preheat the oven to 190.6°C.
  • Weigh A ingredients (sugar, cocoa powder, baking powder, baking soda, salt) in a bowl. Stir to mix.
  •  Weigh B ingredients (eggs, water, oil, vanilla) in a separate bowl. Whisk lightly.
  • Add B into A mixture and stir mixing on low speed for 30 seconds, for example, with KitchenAid® Stand Mixer equipped with whisk attachment to moisten ingredients.
  • Turn speed up to medium for 2 to 3 minutes. Stop mixing when dry ingredients are thoroughly incorporated.
  • Pour batter into mini cupcake pan. Bake in the preheated oven for 10 to 12 minutes or until a toothpick inserted into the center comes out clean. Time will need to be adjusted for different pan size.
  • Cool cupcakes for 2 to 3 minutes, then transfer to the cooling rack.
