Fresh Chlorella is ideal for processing in foodstuffs. This Duplaco Chlorella fresh microalgae product has >10% dry matter. Chlorella contains all essential amino acids, vitamins, minerals, and antioxidants.
Possible applications are in Bakery, Juices, Meat Substitutes, and in International Kitchen. You can add the microalgae directly as a functional ingredient to your end product. The recommended dose is 0.5 g / kg body weight per day.
Baking using fresh algae
Duplaco fresh Chlorella (10%) is an excellent substitute for the water that you normally use when baking baguettes, for instance. Compared to ‘normal’ baguettes, this alternative using algae contains 11% less carbohydrates and 15% more proteins. What’s more, this variant is a source of fibres and vitamins, including B8, D2 and K1. Want to add algae to cookies? The dried powdered variant acts as a partial substitute for flour and sugar. This addition results in 22% more proteins and 65% more dietary fibres. The cookies are also rich in the vitamins K1, B8, D2 and are a source of iron. When baking cakes, we also partially replaced the cake mix with the powdered variant. Once again, a healthier alternative: 87% more dietary fibres, 4% less sugar, 14% more protein and rich in vitamin K1.
Adding algae to smoothies and ice creams
Adding fresh Duplaco Chlorella (10%) to smoothies makes them rich in vitamin K1. The combination of fresh Chlorella and avocado with apple or mango is especially tasty. The fresh Chlorella is also suited for making ice cream. Just combining cucumber and lime with fresh Chlorella already results in almost three times more protein and 77% more dietary fibres than in ice cream without microalgae.
Applying in algae pasta, pesto or wraps
Duplaco fresh Chlorella or dried algae can also be used in dishes such as pasta, wraps or pesto. Adding extra salt is then no longer necessary thanks to the salty flavour that Chlorella naturally possesses. To prepare wraps, the water can be substituted with fresh Chlorella (10%), as with baguettes. The pesto is just as easy to make. It only requires a little extra binding agent to make the pesto firmer. The pesto has a slightly milder flavour than your ‘average’ pesto.
Burgers with algae as a meat substitute
Standard vegan burgers have been available in supermarkets for some time already. Duplaco algae can be used to prepare a new type of vegan burger that contains 49% fresh Chlorella (10% dry matter). Thanks to the high values of the added Chlorella, this algae burger is not only vegan, but also produced very sustainably. The algae burger even contains 68% more protein, 22% less salt, 27% more dietary fibres and 12% less carbohydrates than the average meat substitute. The addition of algae is therefore not only more sustainable, but also healthier!
You can preserve frozen algae in unopened, original packing up to 18 months after the date of production. Once defrosted keep the algae stored in a dark and cool place in the original packing. Consume or process defrosted algae within 3 days. Duplaco does not heat-treat the product. We, therefore, recommend pasteurizing the product before use.
