Description

DO IT Organic locust bean gum is made from superior quality carob seeds. Remove the peel and germ from the seeds by thermo-mechanical process. Small quantity of water is added to make a soft milling, dried into a fine powder called locust bean gum. The gum has various uses in food products like forms smooth meltdown in ice cream, provides mouthfeel in milk, beverage products, minimises syneresis, provides texture to cereal products, maximise gel strength in canned meat, improve freeze-thaw stability in frozen foods. It is an ideal replacement for gluten, low calorie foods.
