Red Jalapeño Mash is made with fresh chillies. These are crushed, salt added and the result is a chilli mash offering consistent colour, capsaicin(heat) levels and flavour. The simple process of fermentation has been around for centuries. The benefit of using a mash is product consistency, available all year round so you are not reliant on crop time tables.
