MgCl₂ food flakes (99.0% pure) is a pure magnesium chloride hexahydrate (MgCl₂.H₂O), which can be used in a wide variety of food products and applications, such as texture, solids and taste improvement, moisture retention enhancement, salt reduction and shelf-life extension. MgCl₂ food is used as coagulant in tofu production, as elektrolyte in sport drinks or to enrich food and beverages with magnesium. Magnesium chloride offers several similar properties as sodium chloride without increasing the sodium content. Besides, a number of health claims is applicable. The product meets or exceeds the requirements of current EU Food Additive Regulation (E511). The product is highly soluble in water by an exothermic reaction, and is very hygroscopic (able to attract moisture from air).
